um, i think something may be wrong with your oven.
try turning the temp up a little to see if it cooks faster.
its done when the inside is not pink anymore. or you can take a temperature if you have a meat thermometer.

Are you thinking the chicken cooks in the marinade because it doesn't. It needs to go in the oven. Besides if it was being cooked in a pan or the oven after three hours it probably would be burnt. Something is definitely not right with what you are doing or have done.

3 hours is a long time to cook even a whole chicken! That's 302 fahrenheit. How are you cooking it? Baking, stewing, frying?? It has to be done after 3 hours, maybe the spices have made it appear pink! It's not necessarily going to be white.. Smoked chicken has a pinkish tint due to the smoke so the spices could be why it is pink.

If I were you, I would use the whole chicken and boil it until it's done. Let it cool. Then, de bone it and take the skin off. When a chicken is cooked whole, the bones and the fat make it more tasty. A boneless, skinless chicken really has no flavor.

If it is still pink inside its not cooked, and with chicken, medium rare is not good, you want it fully cooked. If its in the oven and you are afraid it will get dry, stab the chicken a few time with a fork and wrap it loosely in aluminum foil (like a bag type thing). it causes this steaming effect. keep checking it every 10 minutes or so by cut a slit in it and kind of pulling it open so you can see the inside. If its white all the way through, its done.

I wouldn't keep it for over a couple of days. You might try to put serving size portions in seal able bags and freeze it.

Of course!
But I would turn down the oven about 25 degrees less that the box says.
I wouldn't cook them as long either.
