I usually estimate you get about 10 oz. of cooked meat per pound of chicken. But it depends on the bird and what parts you prefer to eat or throw. So for you stew recipe, I would go with about 2 pounds of chicken breast – but since it is in a stew, you don’t have to be exact by any means.
If I were you, I would use the whole chicken and boil it until it’s done. Let it cool. Then, de bone it and take the skin off. When a chicken is cooked whole, the bones and the fat make it more tasty. A boneless, skinless chicken really has no flavor.
